RHUBARB CHUTNEY

• 3 lbs. fresh rhubarb
• water
• 1 Tablespoon salt
• 1 Tablespoon turmeric
• basic masala

Trim rhubarb and cut into cubes. Make massala. Add rhubarb, stir, add salt, turmeric and stir. Cover with water and cook until water is evaporated. Serve cold.

Italian Breaded Zucchini Sticks

Serves 4

• 3 zucchini
• 1 cup flour
• 1/2 cup bread crumbs
• 1 1/2 cups water
• 1/2 teaspoon salt
• 1 teaspoon basil leaves
• pinch of black pepper
• pinch of hing
• oil for frying

1. Quarter zucchini lengthwise and cut each piece in half. In bowl combine flour, bread crumbs, and spices. Add water and stir.
2. Fill skillet full with oil and then heat. Dip zucchini pieces in batter and then into hot oil. Fry on all sides until tender and crisp. Serve hot.
