MUNG BEAN DAHL

• 1 cup mung beans
• 6 cups water
• 1/2 teaspoon finely chopped fresh ginger
• 1 large fresh sliced tomato
• 3 Tablespoon ghee
• 1 teaspoon salt
• 1 teaspoon turmeric
• 1/2 teaspoon cumin seed
• 1 teaspoon red pepper

Wash beans and put into a saucepan with water. Add tomato, ginger, turmeric and salt. Bring to a boil. Turn to a low boil and cook until the beans are soft and broken up. Spice as with basic split dahl.
